TWD: Fresh Mango Bread

I was really excited about making mango bread for TWD this week. It was a nice change of pace from dessert recipes. This quick bread is filled with fresh mango and was a breeze to whip up.

I enjoyed it, but found that had a little too many spices for my taste. It was more of a spice bread with a little mango as opposed to a spiced mango bread. Does that make sense? It does in my head! :)

I did like it, but I don't know if I will make it again. My friend, Britteny, said she really liked it and so did her daughter. Overall, I would have to say that this was a successful recipe, just not my favorite.

Thanks to Kelly of Baking with the Boys for choosing this recipe, which you can find on her blog. Also, check out the blogroll to see what the other TWDers baked up!

I didn't try mine since I gave them away for mother's day, but sure did smell like a spice cake. Nice to see what it looked like inside!

Cristine, your bread looks delish.

I checked out the recipe, and it IS heavy with spices. I can see how it would overpower the mango, which I think has a delicate flavor. Way too much ginger, for starters, WOW!

I'm intrigued by the idea of a mango bread, however, and am glad you tried this and shared your opinion.

This looks soooo good! I toned down the ginger and added a bit more cinnamon as I'm crazy about cinnamon. Also added some shredded coconut and chopped pecans to the mix: delicious!!

It was heavy on the spices, but I liked it. It might be worth trying with out so much ginger.

Your bread looks great!

Yep, I really like it. Lexi LOVED it. She learned the word bread because of it. She would come in the kitchen and start asking for bread. As soon as she saw me pull out the mango bread she would start doing a happy dance.

I agree that it was more like a spice bread, instead of a spiced mango bread..but,the hubby liked it. Yours looks great, btw.

That's what I was trying to say, but couldn't find the words for it.. spice bread with a little mango. I halved all the spices to let the mango flavour come out a bit. It looks really good!

I totally agree about the spices. I was looking for a fruitier flavor. Ah well. Live and learn.

There really was a lot of ginger in this! Sorry it wasn't your absolute favorite, but it sounds like your friends were happy to take it off your hands. It looks great!

I got you. I'm not sure I'd like spiced bread with mango either.

Too bad you didn't love it, but at least your friend and her daughter did!

I agree that the mango flavor wasn't very strong. I substituted different spices - and it worked out really well for my tastes. Looks great!

I won't be making it again.

I thought it was good though.

I also backed off on the ginger.

Well even if you didn't care for it much your bread looks wonderful. I thought it was good especially with tea!

Looks terrific, sorry it wasn't your favorite... :)

Your mango bread looks really yummy! I didn't get a lot of the mango flavor either, I think I diced them too small. I like how they pop out in yours.

I enjoyed the spices, it made the bread so tasty for me. I'm glad you had some fans, though! It looks wonderful.

I completely understand what you're saying! I wish this bread were more of a mango-focused bread, too. I think I would really like a mango-based bread. Either way, your bread certainly looks delicious, and I'm so glad your friend and her daughter were such huge fans!

So funny- I have that book, I was in Tuesdays with Dorie and I dont remember seeing this one at all. It looks good. I loved spiced things. Now I have to go look in my book.

I really don't care for ginger at all and always sub something else for it in recipes. It's to bad the spices over powered the mango.

I don't know that I would like this one either. I love mango but after putting it in muffins I'm not so sure I like it in bread type recipes. It looks nice though!

i totally agree w/you but this bread was a huge hit at my office!

Yours sure looks yummy! I reduced the ginger and added cardamom, so mine was probably even more like a spice cake, but we still loved it.

Totally agree, had the same problem, but your loaf looks very good.

When I made it the second time, I lessened the ginger and preferred it that way. Thanks for baking along with me this week!

I didn't mind the spices, but then I added some extra fruit. Still, your bread looks lovely!

Your bread looks great. If I make this again, I'll leave the ginger out and see how it tastes.

Love the great looking pieces of mango in the bread! :)

Glad you had some happy recipients. I enjoyed it, but I also think it would have been good without the spices!

I agree. It was a spice bread with mango. But it was a good spice bread. (And I added more ginger.) Yours looks just right.

Hello darling Cristine! I was in your neighborhood these past 10 days . . . so jetlagged right now but had great memories of Spain and Portugal.

Your mango bread looks yum. I did not like it the first day but on the second day, it tasted amazing. Oh, I also added more mangoes than what was suggested. :)
